A Humble Vegetable Reimagined

We have not exactly been surprised by your enthusiasm for celery, but it has given us no shortage of delight. Here at Romano’s, one of the most popular first courses has been the braised celery hearts with bone marrow crumb.

The History of Celery as a Delicacy

Poor celery has long suffered a reputation as a health food, the kind of thing only marginally enjoyed by rabbits and those with similar appetites. But things have changed.

Here at Romano’s, we bring this humble veg back to its glory days during the Victorian and Edwardian eras, when it was extremely difficult to grow, and therefore, became a delicacy. Back then, it was braised in rich stocks and served often alongside roasts.

At Romano’s, we employ a similar technique, but invoking a key component of umami with a bone marrow crumb. It has quickly become a Romano’s signature, and we hope you enjoy it as much as we do.
